Chicken Drumsticks & Daikon Radish Simmered with Ginger

I had a cold and wanted to eat a dish that used ginger, and since chicken drumsticks also have collagen, I simmered them with daikon radish and ginger.

- Use 2.5 cups of water to make the dashi stock. If you use 1 teaspoon of dashi granules, it can be made easily.
- If you don't have light soy sauce, you can use regular or dashi soy sauce (Since the amount of salt in soy sauce varies, adjust accordingly).
- When removing the scum, you can skim off the oil to make the dish even healthier. For 3 servings. Recipe by ruruchirin

Ingredients

3 servings
  1. 6Chicken Drumsticks
  2. 1/3Daikon radish
  3. 2/3Carrot
  4. 5to 6 Green Beans
  5. 1 pieceGinger
  6. 500 mlDashi stock
  7. 3 tbspUsukuchi soy sauce (if you have it)
  8. 3 tbspSake
  9. 1 tbspMirin
  10. 1 dashSalt
  11. 1 tbspVegetable oil
  12. ☆Marinade☆
  13. 2to 3 tablespoons Sake
  14. 1Salt

Steps

    Marinate the drumsticks in the ☆ ingredients for about 15 minutes.

    Cut the daikon radish into 1.5cm thick round slices. Cut the carrot into bite sized pieces by beveling. Peel and slice the ginger. Cut the green beans in half diagonally.

    Heat oil in a pot on medium heat. Add the chicken drumsticks and the ginger, and cook.

    When the chicken has begun to cook, add the daikon radish and carrot. Turn the heat to low and quickly stir-fry while coating with the oil.

    Add the dashi stock to Step 3 and boil with high heat. Remove the scum.

    Add the soy sauce, sake, and mirin. Taste it and add salt as necessary to season.

    Cover with a lid directly placed on the food, lower the heat to medium-low and let simmer for 15-20 minutes. Add the green beans and simmer for another 3-4 minutes.

    Arrange on a dish and it's done!
