Penne with Salmon and Genovese Pesto

  1. 7 ozpenne pasta (200 g)
  2. 7 ozsalmon (200 g)
  3. 1 tablespoonextra virgin olive oil (15 ml)
  4. Ingredients for the pesto
  5. 3 1/2 cupsfresh basil leaves (about 100 g)
  6. 1/4 cuppine nuts (35 g)
  7. 2/3 cupgrated Parmesan cheese (70 g)
  8. Pinchcoarse salt
  9. 3 tablespoonsextra virgin olive oil (40 g)

    Cook the pasta in plenty of salted water. Meanwhile, cut the salmon into strips and sear it in a skillet with a drizzle of olive oil for a couple of minutes.

    Now make the pesto: Wash the basil, pat it dry with paper towels, then blend it in a food processor with the pine nuts.

    Add a pinch of coarse salt, then mix in the grated cheese, and gradually add the extra virgin olive oil while blending until smooth.
