Dry Neem Flowers, Veggies Subzi(no onion, garlic)

Neem flowers bloom in the month of March. The fragrance of fresh Neem flowers is amazing. The Neem flowers are plucked, cleaned, dried and stored in an air tight container for further use to make recipes.
This is the signature recipe of my mother that I learnt from her.Most Odia people store Neem buds and flowers to use year round.
As Neem flowers are bitter, veggies like pumpkin, potato and brinjal go very well with. Here, pumpkin and potato are taken to prepare the Neem flowers dry Subzi which goes well with steamed rice.

Arrange and assemble the ingredients first.
To save time, I boiled the veggies (half boiled)in the microwave oven. - 2

Heat mustard oil, add mustard seeds and allow to crackle. Place dried neem flowers and saute on low flame till aromatic.

Add the half boiled vegetables, dry red chilli, salt and turmeric powder. Mix well and cook on low flame till done.
