In the pvibrant world of Pakistani cuisine, a standout dish is popular is mixed vegetable curry. It’s a versatile and delightful dish, vibrant with the colours of various vegetables and brimming with a symphony of flavour, courtesy of the numerous spices used.
This is a vegetarian take on the famous karahis of Pakistan. This vegetable karahi is loaded with an assortment of vegetables in thick, generously spiced tomato gravy.
This recipe is easy to make, cooks in a little bit over 30 minutes and uses ingredients easily available in the kitchen. The vegetables are cut in larger size and cooked in a way that they are a little less “mushy” than often found in vegetable curries.
You can of course cut your vegetables into smaller pieces!
This karahi is flexible enough so you can use the vegetables you have in your fridge and comes together with minimal effort. A simple and healthy dry vegetarian/vegan sabzi that tastes delicious served with any rice, naan, chappati, side salads or side dishes of your choice.

Heat oil in a pot or wok and fry ginger-garlic for 10 seconds.

Add cumin seeds and tomatoes and cook till tomatoes are soft.

Add potatoes, carrots, Kashmiri chilli powder, salt, chilli powder, chilli flakes, turmeric and yogurt. Mix and cook till yogurt water evaporates.

Add cauliflower, green chillies, pepper powder, garam masala and water. Mix, cover and cook on low flame till vegetables are tender and oil separates.

Add lemon juice, kausri methi, bell pepper and onion; mix and cook on low flame for 10 minutes.

Serve garnished with cilantro.
