Peri Peri Capsicum

Take fresh Capsicum 🫑

Assemble ingredients

Cut Capsicum into two halves, then marinade with salt and keep for around 10 minutes.

In moderately heated pan add oil, all to heat then add mashed potatoes + salt + green chilli + sweet corn and sauté for 3-4 minutes, let moisture from potatoes dry up.
Add peri peri masala and sauté for around 2 minutes. - 6
Filling for Capsicum is done, allow to cool, add chopped Coriander and mix well.

Take capsicum halves, fill it nicely with the prepared potato filling.

Take a pan / kadhai, add oil and allow to heat moderately, drop the capsicum very gently and fry under medium heat and fry from all sides.
Capsicum should cook properly from all sides. - 9
Capsicum halves is fried well.

Top with cheese slices and few sweet corn, sprinkle slight Peri Peri masala and microwave for few seconds till Cheese melts.
