
Spicy Chicken & Potato Stew

Cut the chicken breast into bitesize pieces

Heat the vegetable oil in a large pan over a high heat and when hot, add the chicken to brown on all sides for 4-5 minutes

In a bowl, combine the gochujang paste, gochugaru powder, soysauce, crushed garlic and honey

Add this to the pan along with 200ml of water, stir to combine and pop the lid on

Bring to the boil, then reduce the heat and simmer gently for 5 minutes

Add the chopped potatoes, onions, carrot and bring to the boil again, then reduce the heat and simmer for 20-25 minutes

Stir in the sesame seed oil and cook for a further minute

Serve in bowls with rice
