These are very easy to make and freeze well. Great for meal prep! #PrepAndPack You can do a lot of different combinations. Broccoli and Cheese, Spinach and Mushroom, Peppers and Onion. Tomato, Spinach, and Swiss Cheese is my favorite.

Spray your muffin tin down with spray (I went a little crazy with the olive oil spray on this one)

You want to add the Mirin and Soy Sauce to the eggs and mix well. Mirin and Soy Sauce in eggs is a game changer if you have never tried it before.

Fill the muffin cups about halfway. I count one to three for each and it works out. If you have a smaller muffin tray, this will make about 12 muffins

Bake at 350 for 20 minutes. To freeze wait until they completely cool and wrap in foil. Place the foil egg cups in a freezer bag and write the date on each. They freeze for up to 3 months. To enjoy from frozen place the desired number of cups in the fridge over night. Microwave about 30 seconds before enjoying.
