Creamy Tomato Bisque with Pasta
We had a bunch of fresh tomatoes growing in the garden, this soup highlighted the fresh sweet tomato perfectly!
Cooking Instructions

Peel your tomatoes as best you can, roughly chop and set aside

In a large soup pot, drizzle your olive oil and Sautee your onion and garlic for about 5 min
- 3
Add your tomatoes, basil and seasonings. Then add your water or chicken broth. Bring everything to a rapid boil.

Turn the heat down and let the soup simmer on low, slightly covered for 1 hour.

After an hour, blend the soup with an immersion blender or in batches in your regular blender.

Pour the soup back to the pot and let simmer about 30min. I drizzled with a little extra olive oil at this point.

Turn the heat off and stir in your heavy cream.

Spoon the desired amount of pasta in your bowl, then pour the desired amount of tomato Bisque to your bowl.

Garnish with parm cheese and more fresh basil to garnish.
