Ingredients

15 minutes
1 medium bowl
  • 17.5 ozstrained Greek yogurt (about 500 grams)
  • 1small cucumber
  • 2garlic cloves
  • 4 tablespoonsolive oil
  • Juice of 1 lemon
  • 2 tablespoonsfinely chopped fresh mint
  • Salt and pepper
  • 1/2 teaspoondried mint for serving

    Peel the cucumber, cut it lengthwise, and use a teaspoon to remove the seeds.

    Grate the cucumber, season with salt and pepper, and set aside for 10 minutes.

    Finely chop the mint and crush the garlic.

    Meanwhile, place the yogurt in a bowl. Add the garlic, olive oil, lemon juice, and fresh mint leaves on top.

    Squeeze out the excess liquid from the cucumber. Add it to the bowl and mix until well combined.

    Refrigerate for 1 hour. Serve sprinkled with a little dried mint. It's a wonderful side for your meals or enjoy it with warm pita bread.
