I've been making this for a few years. Sometimes I add carrots or other vegetables to the soup. My kids like to put cheddar cheese in theirs before eating.
Cooking Instructions

This is all you need. I prefer to make my own stock and I try to get low sodium ham.

Place 4 bouillon cubes in a heat safe container. Pour 4 cups of boiling water over the cubes. Set aside and cut up your onion and potatoes.

Add potatoes to the bottom of your crock pot and sprinkle French fry seasoning. French Fry Seasoning blends Paprika, Onion Powder, Garlic Powder, Salt, and Sugar. Try to coat all of the potatoes with the seasoning.

Add to the top of the potatoes diced onion, frozen corn and ham. Stir the mixture around till everything is combined.

Stir the bouillon mixture to make sure the cubes have dissolved. Pour the liquid over the top of the ingredients. Slow cook the soup over high for about 4-5 hours. My rice cooker has a soup option. If yours does too you can use the soup option and it takes about 35 minutes.

20 minutes before the food is done, take out about half of the potatoes and mash them with a fork. Add it back into your cooker. Taste the soup and see if you need to add more seasoning. Today I decided this soup needed some red pepper flakes and Thyme.

In the last 15 minutes, add butter, sour cream, and half and half stir well.
