Grilled Shrimp Kabobs

My housemate sister isn't much of a vegetable eater, but she LOVES (and grows) pineapple; so we skip veggies on the skewers and serve as a side. I, personally, would love adding red bell pepper chunks and yellow onion to the skewers.

Steps
- 1
Mix marinade ingredients together in a small saucepan. Heat over medium-low, stirring occasionally, until sugar dissolves. Allow to cool completely. While marinade cools, soak wooden skewers in water.
- 2
Marinate the shrimp for 30 minutes. Remove shrimp from marinade and save the marinade.
- 3
Thread the skewers, alternating shrimp and pineapple. Place in shallow dish and pour the marinade over all. Allow to marinate another 30 minutes.
- 4
Grill until shrimp are pink and done, about 3 minutes per side.
Tips
If you don't have a grill, broil them in your oven a few inches from the broiler element. Keep an eye on them and flip halfway through.
