Spicy Mapo Tofu with Shiitake Mushrooms 🌶️

Mapo tofu is spicy tofu and pork stew that is savoury, spicy, and umami flavour, the ultimate rice killer 😋
Every family has its variations of Mapo Tofu. For example, u can substitute ground pork with chicken or beef. In this recipe, I made this Mapo Tofu with Salmon. To make it vegetarian friendly, u can substitute the meat with shiitake mushrooms.
The most crucial part of Mapo Tofu is a good fermented chilli bean paste - La Doubanjiang. This item is a “must have” in Chinese and Taiwanese recipes. U can find it in local Asian Supermarket or u can also order it on Amazon.

In a hot pan, drizzle in some oil and add the sliced whites part of spring onion, chopped garlic, and chopped thai chillies. Mix it well. Then added a sliced of shiitake mushrooms. Sauté together for 1-2 minutes or until fragrant.

Add in a Salmon cubes, Doubanjiang, sugar, soy sauce, and Sichuan pepper ground. Sauté for 1-2 minutes.

Gently add in the tofu and pour in water. Let it sizzle for 2-3 minutes, occasionally stirring to soak up all the sauce.

Finally, add a mixture of cornstarch and cold water to thicken the consistency before serving. If u like it thicker, add in more cornstarch. Let it simmer for another 1-2 minutes, so it thickens. Garnish with the sliced of green parts of spring onion.
