SHIITAKE MUSHROOM MASALA..
Steps

Remove the water from mushroom, soak it again in water for 1/2 hr. Take out the mushrooms, cut into halves or more, keep aside.

Now take a wok, add oil, heat it. Fry mushroom for 5 minutes on high flame. Keep aside.

Take a pan, add all the given ingredients of gravy one by one, top up with water, boil it until a lil dry. Turn off the flame, allow it to cool down. Grind it to a fine paste with lil water, strain it, keep aside.

Take another wok or pan, add oil & butter, heat it. In goes ginger garlic paste, saute it until rawness is released. Add lil water to avoid burning.

Now add gravy masala, mix it well. Add in salt. Lower the flame, cover it with the lid, cook it for 5 minutes.

Open the lid, increase the flame, add haldi powder, dhania powder & red chilli powder, mix it well. Cook it covered on low flame until oil has oozed out.

Open the lid, increase the flame, add fresh cream, mix it well.

Lower the flame, cover it with the lid, cook it until oil has surfaced.

Open the lid, increase the flame, add garam masala powder & Kashmiri red chilli powder, mix it well. In goes kasoori methi, stir fry it for 30 sec.

Now add fried mushroom, stir fry it for a minute.

Add 1 cup boiled water, mix it well. Give a boil. Cook it covered on low flame until gravy turns saucy. Turn off the flame, open the lid after 10 minutes.

Take out in a serving bowl, garnish it with a dhania sprig..
