3large boneless skinless chicken breast diced
1/2red onion diced
1red and 1 green bell pepper diced
1large zucchini sliced
1 canblack beans drained and rinsed
1 cupbrown rice uncooked
1 canfire roasted diced tomatoes
1 cuplow sodium chicken broth
1 cupshredded cheese
Fresh cilantro for garnish
Ranch Seasoning
2 tspdill
2 tspgarlic powder
2 tsponion powder
2 tspdried minced onion
1 tbspparsley
1/2 tspblack pepper
1 tspsea salt

In a large skillet, cook chicken with onions. Add ranch seasoning.

Stir in bell peppers, zucchini, beans, rice, and chicken broth. Bring to a boil.

Cover and simmer on low for 5 min or until rice is tender.

Sprinkle with cheese, cover and let sit for 5 min or until liquid is absorbed.

Top with cilantro and serve.
