Pyaj Karela fry (Onion and bitter gourd fry)

One more quick and easy recipe of my favourite vegetable: Bitter Gourds. Especially the small verity which is sold these days in market with the name of ‘forest bitter gourd’ will make a tasty side dish for chapatis or plain rice.
I generally put more chilli for bitter vegetables, as I love the blend of bitter and spicy flavours together. I have used both red chilli and green chilli along with red chilli powder for this recipe. If you are a not-so-much-of-chilli kind of person, reduce the chilli as per your pallet, will still taste good.

Chop the bitter gourds length wise. I have used forest variety which are very small in size. You can use the regular hybrid verity as well for this recipe.

Heat oil in a heavy bottomed pan, temper with black cumins/nigella seeds, onion, green chilli and red chilli.

Add the spices: salt, turmeric powder and chilli powder.

Cover and cook in slow flame until done. Keep checking in between to make sure it doesn’t stick to the bottom of the pan.
