This is an attempt to create a recipe based off of AboutToEat's video "How Alvin and Rie Make Chilled Noodles At Home" where Alvin recreates a dish his Grandfather and Mother would make at home using chilled noodles, peanut butter, and shredded chicken!

Cooking Instructions

Cook the noodles according to package instructions

Cool the noodles down by rinsing in cold running water in a strainer or colander
- 3
Combine all the sauce ingredients together and set aside
- 4
Create a minced garlic paste by either using a garlic press or by creating it yourself if you don't have one. To create it yourself, first mince the garlic and then sprinkle some kosher salt. Then "press" your knife against the garlic onto the cutting board making a sweeping motion. Repeat until desired paste texture. The idea here is to release the juices from the garlic bulb without having clumps of garlic in the sauce. Once done, add to the sauce.

To a bowl, add noodles, shredded chicken, and sauce. Stir to combine. Serve with toppings such as chili oil, garlic paste, scallions, or crushed Chinese peanuts. Serve cold and enjoy!

I can't buy only the noodles at my near-by supermarket, and it's too expensive to buy the whole set because I don't use the soup. So when I can't buy only the noodles, I make this Korean-style dish with Chinese noodles or somen noodles.If you don't have the kimchi base, you can substitute with the juice from Chinese cabbage kimchi (2-3 tablespoons).
