Horse radish roots and wasabi plants are the same plant family, and store bought wasabi paste is quite often spiced up green colored horse radish. You can make the real wasabi paste economically from vinegar and 100% pure dried wasabi powder.
Home made wasabi paste stores well in the fridge in an airtight glass jar. Horse radish cream from dairy stays fresh for two weeks, or a few months if made with coconut cream. Wasabi cream sauce is made fresh, very economically, from young horse radish in fall with cream and wasabi powder. Keep pure wasabi powder in airtight container in freezer.

Cooking Instructions

For pure wasabi paste such as used with sashimi or sushi dishes, put teaspoon of rice vinegar in dish, add knife point of pure wasabi powder, stir till smooth. Taste, add more powder till wasabi is your preferred thickness. Natural pure wasabi is light green. Caution: this pure wasabi is many times hotter than restaurant wasabi or store bought wasabi. You can find your preferred spice level by adding water.

For wasabi cream, use small knife to mix 2 Tsp rice vinegar with 1/2 Tsp pure wasabi powder, when smooth, mix into horse radish cream till smooth. Taste to find your preferred spicyness. Keep wasabi cream in jar in fridge, stays fresh two weeks.

To make fresh horse radish cream: Warm honey till liquid, mix with lemon juice, stir into heavy cream. Peel and grate horse radish root with coarse grater, put in food processor. While running, drizzle cream mix in till the cream sauce has the consistency you want. Store in fridge. Dairy cream based horse radish is fresh in fridge for two weeks, coconut cream based is fresh for a few months.

When you sun dry red ripe tomato puree for four days, you get superb tomato paste. If you dont get four continuous days of sun this time of year, dry in oven. No other ingredients added except a teaspoon of seasalt per pint, just dried into paste in the sun on a half size baking pan. Every year, I make the basis for miso soup, two tubs of fresh natto paste from 4 Tbs of old natto paste and fresh soy beans, keep them in the fridge. In case one tub goes bad, I always have the second tub to continue with. I use one pound plastic tubs. One plastic tub of natto makes sixty bowls of miso soup.The broth base is made from a cup of shrimp shells with the heads and tails on, i freeze those till I have a cup full. You can also buy ground dried shrimp or bonito soup stock in dried form in Hispanic or Asian stores or on amazon.When fresh shitake mushrooms are abundant, I slice and dry eight pounds on the picnic table outside to make one pound of dried mushrooms and save for soup. This is a very old family farm recipe to make a delicious meatmix called Spam that is used instead of meat. The special spice is medieval. It is called “nailgrit and rattlespice”. I replicated it in here from fresh ingredients.When a piece the size of a breadslice is fried in a pan, it develops a crispy crust with a soft meaty filling. Enough is made for the whole year when a hog is slaughtered in winter, packed in breadloaf pans till cooled, and cut to bread slice size. Individual slices wrapped and frozen, stays fresh till next winter.I ran out already this August, so I made 24 more pounds from an eight pound pork picnic shoulder.
