This week's Balon challenge is a bit different. It involves cooking with two ingredients that start with the letters B, A, L, O, and N. I decided to make Garang Asem Chicken, using chicken and starfruit. This concludes the Balon Challenge for this week. Continuing into Ramadan. Wow... I am still diligent and consistent in submitting recipes every week. Even though I was "stuck" because some ingredients were hard to find, I managed to submit recipes for 25 weeks straight... yay, I'm proud ☺️🥰
Usually, garang asem is wrapped in banana leaves. But the banana leaves behind the house are still small, so I just used them as a base. It's more practical and saves time. This dish looks simple, but it has a lot of ingredients. However, for authentic and delicious taste, it's okay to add the ingredients one by one. Effort doesn't betray results. The savory, sour, and salty flavors are spot on. Give it a try... 🥰

Ingredients

30-40 minutes
3-5 people
  • 1 1/2 lbschicken, cut as desired
  • 1/2lime
  • 1 packageinstant coconut milk
  • 3 1/3 tablespoonswater (50 ml)
  • 5starfruits, sliced
  • 2red tomatoes, sliced
  • 6bird's eye chilies, more if you like it spicier
  • 5shallots, sliced
  • 5 clovesgarlic, sliced
  • 1 tablespoonsugar
  • 1 teaspoonsalt
  • 1 teaspoonchicken bouillon powder
  • Aromatic Ingredients:
  • 3bay leaves
  • 2kaffir lime leaves
  • 1 stalklemongrass, bruised
  • 1thumb-sized piece of ginger, bruised
  • 1thumb-sized piece of galangal, bruised

Steps

30-40 minutes
  1. 1

    Clean the chicken. Squeeze lime juice over it, mix well. Let it sit for 15 minutes.

    Rinse the chicken thoroughly. Add sliced shallots and garlic, sugar, salt, and bouillon powder. Mix well.

    Place in a heatproof dish, lined with banana leaves. Add sliced starfruit, tomatoes, lemongrass, ginger, galangal, bay leaves, and kaffir lime leaves.

    Pour in the coconut milk and water, mix well. Cover the top with banana leaves. Steam for 25-30 minutes (if using free-range chicken, you may need to increase the time). Make sure the steamer is already steaming.

    Once cooked, remove and it's ready to serve.
