Stir-Fried Yellow Noodles with Soy Sauce (Pad See Ew)

I used to eat this as a child at a local Pad See Ew shop. Their stir-fried noodles were so fragrant and delicious! When I try making it myself, it never quite tastes the same as at the shop. I wish I could go back to that place I loved as a kid.

Marinate the pork shoulder with light soy sauce, green cap seasoning sauce (or extra light soy sauce), oyster sauce, sugar, egg, sesame oil, and cornstarch. Refrigerate for 1 hour.

Blanch the yellow noodles, then set aside.

Heat a wok or large skillet. Add the minced garlic and stir-fry until fragrant, then add the marinated pork and eggs. Stir-fry together.

Add the yellow noodles and Chinese broccoli. Add all the seasonings and stir-fry until everything is well combined.

Taste and adjust the seasoning as you like. Serve hot. At the table, you can add pickled chili vinegar or chili flakes to taste.
