Fettuccine with Green Peas in Lemon Crème Fraîche

Cook pasta as per packaging instructions. Drain, reserving at least 1/2 cup of pasta water, then set aside.

In a skillet over medium-low heat, melt butter. Then, add lemon juice, zest, thyme and pepper and allow to cook for about 2 minutes, stirring well.

Add crème fraîche and milk and continue to cook until hot.

Whisk in parmesan until melted, then add pasta water one scoop at a time until you get your desired thickness of the sauce.

Add cooked pasta and peas, mixing well to coat evenly, for about two minutes to allow the peas to cook.

Serve immediately, topped with more thyme and pepper.
