Ingredients

1 serving
  • 1 portionfettuccine (uncooked)
  • 1/2 cupcrème fraîche
  • 1/4 cupmilk
  • 1/4 cupparmesan (grated)
  • 3 tbspgreen peas (frozen)
  • 2 tbspbutter
  • juice of 1 lemon
  • zest of 1 lemon
  • 1 sprigfresh thyme (chopped, plus more to serve)
  • dashblack pepper (cracked or ground, plus more to serve)

Steps

  1. 1

    Cook pasta as per packaging instructions. Drain, reserving at least 1/2 cup of pasta water, then set aside.

  2. 2

    In a skillet over medium-low heat, melt butter. Then, add lemon juice, zest, thyme and pepper and allow to cook for about 2 minutes, stirring well.

  3. 3

    Add crème fraîche and milk and continue to cook until hot.

  4. 4

    Whisk in parmesan until melted, then add pasta water one scoop at a time until you get your desired thickness of the sauce.

  5. 5

    Add cooked pasta and peas, mixing well to coat evenly, for about two minutes to allow the peas to cook.

  6. 6

    Serve immediately, topped with more thyme and pepper.
