Ingredients

  • 228 gflour
  • 180 mlwater
  • 100 gwhite sugar
  • 226 gmargarine / butter
  • 3eggs
  • 1 tspvanilla essence
  • 12 gbrown sugar
  • 7 gramssalt
  • 3 gramsmixed spices
  • 2.6 gramscinnamon
  • 5 gramsbaking powder
  • 400 gramsdried fruits [ cranberry, raisins, berries, sultanas
  • Lemon juice
  • Lemon zest

Steps

  1. 1

    Mix the dried fruits together with sugar,salt,cinnamon, mixed spices,water and margarine and bring it to boil under low heat. As you stir.

    Let the mixture settle to cool before adding in your eggs, to avoid the eggs from cooking. Give it atleast 30mins to 1 hour.

  3. 3

    Add in your eggs and sifted flour, baking powder and vanilla essence,lemon juice, and the lemon zest and mix it completely

  4. 4

    Prepare your baking tray with margarine and dust it with little flour.

  5. 5

    Preheat the oven at 140°c.
    Put the mixture into the tray and shake it to move any trapped air and let it settle for 10 minutes to level.

  6. 6

    Place your mixture into the oven and bake it for 80 minutes at 140°c

  7. 7

    Let the cake cook before removing from the tray.
    Give it atleast 24hrs before eating it😊. It's usually more sweet 😋.
