Wash and clean the 125 grams of mutton thoroughly and drain excess water.

In a bowl, marinate the mutton with a pinch of turmeric, 1/4 tbsp of chili powder, 3/8 tbsp of coriander powder, a pinch of salt, 1/2 tbsp of ginger garlic paste, and 1/2 tsp of oil. Mix well and let it sit for about 15 minutes.

Pressure cook the marinated mutton with a little water until it's tender and cooked. It may take 4-5 whistles in a pressure cooker.

In a separate pan, roast 3-4 dry red chilies, 1/4 tbsp black pepper seeds, 1/4 tbsp fennel seeds, and 1/4 tsp cumin seeds until they become fragrant. Let them cool.

Grind the roasted spices to a slightly coarse texture. This is your masala mix for the Mutton Sukka.

Heat oil in a separate pan and add shallots, a few curry leaves, and a small piece of cinnamon stick, 1-2 cloves, 1 small bay leaf, and 1 cardamom pod (whole garam masala). Sauté until shallots turn slightly translucent.

Add 1/4 of a medium-sized tomato finely chopped and sauté until the tomato softens.

Add the cooked mutton (without the excess stock water) and sauté until it absorbs the flavors and onions and tomatoes appear as a whole.

Add the ground masala mix (approximately 1 tbsp) and adjust the quantity for your preferred level of spiciness.

Add a pinch of turmeric, 1/8 tbsp of coriander powder, and 1/4 tbsp of chili powder. Mix and cook for 2 minutes.

Add salt to taste and a few coriander leaves. Mix everything thoroughly and cook for another minute.

Serve your delicious Mutton Sukka with Tomato Pepper Rasam & white rice.
