Clean and peel the vegetables. In a large pot, melt the butter with the olive oil. Add the chopped vegetables and sauté over low heat for 15 minutes.

Add the pancetta to the vegetables, then add the ground beef. Sauté until the meat is cooked through.

Pour in the white wine and let it evaporate completely.

Dissolve the tomato paste in the beef broth and pour it into the pot with the meat.

Cover with the lid and cook over very low heat for 3 hours, stirring occasionally and adding more broth if it gets too dry.

When finished cooking, season with salt and pepper, add the milk, and cook for another 5 minutes. Your ragù is ready!
