Napoleons are a french dessert, a delicacy of layers of custard and cream between top and bottom filo crusts, covered with molten pink fontant. Also called Tompouce. See my recipe in cookpad.
By replacing the flat filo dough with real croissants made from the same filo dough, then slathered with pink fondant on top, you create twice the volume with the same ingredients, a lighter, airier dessert and an eye popping childrens delight.

Ingredients

Filling 30 min, baking 30 min
2 people 2 croissants
  • Make the tom pouce napoleon filling without the filo dough in a 7” round spring cake form: stick of butter, 4 egg yokes, 4 Tbs flour, 3 cups milk, 4 Tbs powdered sugar, Tbs corn starch, rose hip syrup

  • Make the california Farm croissant
    1 California Farm Croissants (they are bigger!)
  • Equipment: round 7” spring cake form, baking sheet for croissants, whisk, brush
  • Cost: croissants $2, filling $2, $2 per dessert

Steps

Filling 30 min, baking 30 min
  1. 1

    Bake the croissants, cool, slice horizontally, brush halves with marmelade.

    Make the tompouce filling: melt stick of butter, add 4 Tbs all purpose flour, bake, add milk, sugar, rose hip syrup, rose water, whipped egg yokes, pour into spring cake form, cool.

    Cut cooled stiff filling in 2 half moon shapes, lay on croissant bottom, croissant on top, pink fondant brushed on top of croissant, serve.
