Diwali Special
Steps

Wash and soak whole masoor for 8 hours. Drain and dry on a cloth for 4 hours.

Knead a dough of maida, ghee and salt for the Crispy squares. Rest the dough for 15 minutes.

Meanwhile fry the masoor in medium hot oil, in small batches, until crispy. Transfer onto a paper to absorb the extra oil.

Fry the kajus and magajtari and transfer onto the absorbent paper. (Note to fry magajtari carefully as they splitter in oil. Or can be roasted also)

For Crispy Squares:
Make 2 portions of the dough and roll out into big rotlo. Cut into very small squares. Fry crispy. - 6
Now mix all the fried and cooled ingredients in a big plate. Add in all the final masalas and mix well.

Mix in store- bought nylon sev. Fill in airtight box and serve this special snack for Diwali.
