Filipino Beef Mechado (Beef Stew)

Ingredients

6-8 serving
  1. 7 lbsbeef tri-tip (any beef type will do)
  2. 1 (1/2 cups)soy sauce
  3. 2 tspground pepper
  4. 2 tspgranulated garlic or garlic powder
  5. I whole head of garlic
  6. 1large onion
  7. 1 slicelemon
  8. 4bay-leaves
  9. 2 tspwhole pepper corn
  10. 2 tbspsugar
  11. 2 tspchicken powder
  12. 1-2 canstomato paste (depending on how creamy you want your sauce)
  13. 10mini potatoes (or 5 big size)
  14. 6small carrots
  15. 3different color bell peppers (any color combo will do)
  16. 3 cupswater
  17. salt (optional)
  18. 2 tbspcooking oil
  19. 1 stickbutter (1/2 cup)

Cooking Instructions

    Combine soy sauce, ground pepper, and granulated garlic. Marinate Beef in the soy sauce mix for 30 min to one hour.

    Add cooking oil to a large wok until hot then add one stick of butter and melt. Add garlic and onion. Once translucent add beef and mix. Cover and let it simmer for 20-30 minutes. Make sure you mix in between.

    Add the left over marinade sauce, pepper, knorr powder, sugar, bay leaf, slice of lemon. Add salt only if needed. Then add 3 cups of water and one can of tomato paste (add the other can only if needed). Place cover back and let it simmer for one hour to one hour and 30 minutes (after 30-45 min mix it then cover again).

    Once meat is soft add, potatoes and carrots. Mix it and then cover and let it simmer for another 30 minutes. After 30 minutes add bell peppers.

    Cook for 5 more minutes then transfer to serving plate. Serve with white rice and enjoy.
