Ingredients

60 minutes
6-8 people
  1. 1 poundelbow macaroni
  2. 2 poundsground beef (easily substitute turkey or chicken)
  3. 1 cupsalsa
  4. 10 ozcan red enchilada sauce
  5. 2 envelopestaco seasoning
  6. 1&1/3 cup water
  7. 1 cupcheddar cheese shredded
  8. 1/2 cupmozzarella cheese shredded
  9. 1/2onion chopped
  10. 8 ozcream cheese

Cooking Instructions

60 minutes
  1. 1

    Preheat oven to 350F

  2. 2

    Boil macaroni until al dente, and drain

  3. 3

    Brown meat and onions

  4. 4

    Add taco seasoning and water to meat, simmer for ten minutes

  5. 5

    Add cream cheese to meat, mix thoroughly

  6. 6

    In a separate bowl, mix salsa and enchilada sauce

  7. 7

    Coat bottom of 4.5quart glass baking dish with salsa mixture

  8. 8

    Spread half of pasta in first layer in baking dish

  9. 9

    Spread 2/3 meat as second layer in baking dish

  10. 10

    Spread half of cheese as third layer in baking dish

  11. 11

    Spread rest of pasta as fourth layer in baking dish

  12. 12

    Spread rest of meat as top fifth layer in baking dish

  13. 13

    Spread rest of salsa mix as sixth layer in baking dish

  14. 14

    Spread rest of cheese as seventh layer in baking dish

  15. 15

    Cover with aluminum foil and baking for 30 minutes

  16. 16

    Uncover and bake for 15 more minutes
