Seitan is a product made from wheat (gluten)*. Many people like it for it's textural resemblance to meat and it's nutritional value, with 75g protein and 14g carbs. It firm yet spongy and it absorbs sauces and liquids great, so it's perfect for stews or soups.

Steps

Assemble ingredients and wash, peel and cut vegetables.

Heat over medium heat 3 tbsp of olive oil and add carrots. Cook covered for 4 minutes, mixing occasionally.

Add mushrooms and cook for an additional 3 minutes, covered. Add green peppers, mix and cook for 3 more minutes.

Add thyme, rosemary, pepper and hing, mixing well.

Cut seitan into bite size pieces and add to the pot. Add water, soy sauce, and browning sauce.

In a separate bowl, add cornstarch with some water (or some of the stew liquid) and then added to stew. Mix until well incorporated

Let all the flavors mix for 1-2 minutes covered before removing from heat.

Serve with some warm buttery rice and enjoy!
