Sajana ghanta (Mixed vegetable Drumstick leaves)

Drumstick greens is probably one of my most favourite leafy vegetables. I keep trying different combinations of spices and veggies, to come up with new recipes. This particular one has become our family-favourite off late.
Pair with roti/rice of your choice, my personal favourite is pairing with plain white rice and dal.

Steps

Chop veggies. Clean and wash leaves. Crush 5/6 pods of garlic along with 1/2 red chilies.

Heat oil and crackle panch phoron. Add the veggies with, turmeric powder, salt and let it release water and get cooked.

When veggies are half cooked, add the leaves and crushed garlic+chilli.

Add little water if the need be, cook until everything is cooked and water reduces completely. Switch off, add the grated coconut.

Beautiful looking and tasting dish is ready to be paired with rice/roti.
