If you don't know what to serve your vegetarian guests on Thanksgiving or you are searching for a meat-free main dish, you can make this epic stuffed peppers to go along with your sides!
Cooking Instructions

Assemble all ingredients and preheat oven to 325 °F

Start by cooking rice according to package structions.

Meanwhile, prep TVP by adding 1/2 cup of hot water with the TVP in a covered container for 5 minutes or until the TVP has absorbed most of the water.

Prep peppers by washing, and removing the top off the pepper (dice it and save it) as well as the seeds and core (discard). Boil in a covered pot for 3-4 minutes. Drain and set aside.

In a non-stick pan, heat up 2 tbsp of olive oil and add TVP. Mix and cook uncover for 3 minutes

Add seasonings (sazon, salt, pepper) and garlic clove. Mix well and cook for 2 minutes.

Add mushrooms and the top of the peppers, mix well and cook covered for 5 minutes.

Add tomato sauce, mix well and cook uncovered for 7 minutes, mixing occasionally. Finally, add butter and mix it.

Assemble stuffed peppers by adding rice and TVP mixture. Place them in a oven safe tray and cover with aluminum foil. Bake for 15 minutes or until desired consistency.

Remove foil, add cheese and increase temp to 475°F for 5-7 minutes.

Serve with a side of mac and cheese and green beans and enjoy!
