It's the season of various religious functions, vrats , fasting and we eat vrat special foods. Even though the traditional vrat foods are all favourites, sometimes we want variety. So this recipe of arrowroot and Singhada flour biscuits ( water chestnut flour) is a tasty and healthy recipe. It's low carb, low gluten and protein rich recipe and is very high on protein, calcium, magnesium and vitamin B complex. Do give it a try! They are ideal for ekadashi, mahashivratri, navratri season.

First, take a mixing bowl and add jaggery and ghee together. Cream it with a spatula till creamy and fluffy. Add yoghurt, baking powder and baking soda. Mix well.

Sieve the flours and add in batches, while creaming in between. Mix to a soft dough. Add milk only if needed.

Shape the dough in a cylindrical shape and wrap in cling wrap. Refrigerate for an hour.

After an hour, first keep the oven for preheating for 10 minutes on 180 °©. Then remove the chilled dough, unwrap it and slice into 1 inch thick slices.

Line a baking tray with silicon mat or baking paper and arrange the biscuits. Then bake them in a preheated oven for 20 to 25 minutes. Remove if golden on top, or bake further for 5 minutes.

Keep on a wire rack to cool for 20 minutes. Then serve with milk or tea or coffee. Enjoy!
