Cooking Instructions

In a bowl, combine your chopped tomatoes and geeen onions, with a drizzle of oil, and the juice from 2 lime wedges (squeeze them into the bowl). Stir together and set in fridge for later.

In another bowl, combine your sour cream, juice from 1 lime wedge (squeeze into the bowl), 1 tsp water and a dash of salt & pepper. Stir together. It should be the consistency to drizzle. If not, add another 1 tsp water to lighten it up. Set mixture in fridge for later.

In a skillet, drizzle some oil and sauté your green peppers on medium for a couple minutes. Then add your ground beef, and half the text Mex paste (dry ingredients and 1/2 the can of tomato paste). Stir and cook until meat is cooked thoroughly.

Now we will fill your tortillas with the meat mixture. Place a couple scoops into the middle of your tortillas (as much as you’d like), and then roll the tortilla and place in a square baking dish. Continue this process with each tortilla, using all of the meat mixture.
Now take the other half of your tex Mex paste and drizzle it over the top of all the tortillas in the baking dish, using it all up.
Sprinkle your cheese over the top and bake at 475 degrees for 6-8 minutes. - 5
After it’s done, take it out of the oven and you can either drizzle the entire baking dish with your sour cream mixture and then top with your tomato and green onion mixture,
OR
You can put the pico de gallo (tomato and green onion mixture) and the sour cream mixture on each persons individual plate. We do this, because not everyone likes both of those topping.Add your homemade rice to your plate and enjoy!
