Beef and Bean Enchiladas

Cooking Instructions

Preheat oven to 375.

Brown and drain ground beef, onions, and peppers in large skillet.

Add refried beans to skillet and stir until mixed evenly.

Toss in a sprinkle of cheese, stir once more. Set aside.

Heat all three cans of soup/sauce in a separate pan, stir with a whisk.

Add juice from jalapenos and a sprinkle of cheese.

Dip tortilla in sauce on one side.

Fill tortilla with mixture, sprinkle of cheese, and dollop of sauce.

Fold and fill a greased baking pan until out of mixture.

Pour remaining sauce over the top of folded tortillas and cover everything with remaining cheese.

Cover with tin foil, bake for 45 mins, then remove.

Let it cool, and serve with sour cream, salsa, and whatever else!
