Beat egg whites at high speed until frothy, gradually add sugar until soft peaks form.

Lower the speed, add the egg yolks one by one, beat until smooth do not over mix.

Add honey, mix well do not over mix.

At the lower speed, add flour gradually, mix it well do not over mix. Turn off the mixer.

Add milk, stir using a spatula until smooth.

Add 1 tbsp flour to the bowl of raisins, mix well. Pour the raisins into the egg mixture. Stir using a spatula.

Pour into a loaf tin lined with parchment paper. Bake at 180°C for about 35-40 minutes.

After cooking, it must be hotwrapped, wrapped in plastic clingwrap, put in the refrigerator for 1-2 days and then eaten. (The flavour will be more rich, fragrant and deep)
