We usually have an over abundance of citrus fruits: clementines, satsumas & lemons. In 2022, the satsuma trees produced a bumper crop, but were so sour they were inedible. We were knee deep in clems & lemons. The satsuma’s and clems did nothing this year. There’s maybe 10 lemons. Alas, no preserves or jams this year 😟. But I have recipes! #GoldenApron23

Ingredients

  1. 6peeled clementines
  2. 1/4 cuporange juice
  3. 1/4 cupsugar
  4. 1 Tbsplemon juice
  5. Pinchsalt

Cooking Instructions

  1. 1

    Blend all ingredients together in mixing bowl, until it looks super smooth.

  2. 2

    Pour through a cheesecloth to remove a lot of fiber.

  3. 3

    Place in refrigerator to cool and thicken a bit. Approximately 30 minutes.

  4. 4

    Serve over pancakes, waffles, ice cream or cake.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
