Assemble all the ingredients required to make “Healthy, Nutritious and Delicious Methi Coconut Laddu”.

Clean, rinse and dry the methi seeds. When completely dry, transfer the fenugreek seeds to a grinder and grind to a fine powder. Transfer the fenugreek powder to a mixing bowl. Add milk and mix it well. Soak for 3-4 hours. This process helps to reduce the bitterness of the methi seeds and the ground particles become nice and fluffy.

The fenugreek after soaking it for 3 hours.

Melt 3-4 tablespoon of ghee in a kadai. Add the milk soaked fenugreek and roast on medium flame for 7-8 minutes until the color changes, ghee separates and it becomes aromatic. Transfer it into a large mixing bowl and set it aside.

Melt 2-3 tablespoon of ghee in a kadai. Add the wheat flour and roast on medium flame for 12 minutes, until it turns golden brown. Transfer it into the bowl alongwith the roasted fenugreek. Mix it well and set it aside.

Melt 5-6 tablespoon of ghee in a kadai. Add the edible gum, little at a time, and fry on low flame. Transfer it on to a plate. Crush it fine using a roti presser and set it aside.

In the same kadai with the leftover ghee, add the almonds and roast it slightly on low flame for two minutes. Transfer it on to a plate. Allow it to cool. Transfer it to a grinder and grind to a fine powder. Transfer it into the bowl alongwith the roasted fenugreek and wheat flour and set it aside.

In the same kadai with the leftover ghee, add the dried coconut slices and roast it slightly on low flame for two minutes. Allow it to cool. Transfer it to a grinder and grind to a fine powder. Transfer it into the bowl alongwith the roasted fenugreek, wheat flour and ground almonds and set it aside. This step is optional. You can add it without grinding.

To make the spice mix, in a blender add the whole green cardamom, peepar, white pepper powder and dry ginger powder and grind it fine. Sift it and set it aside.

Melt 2 tablespoon of ghee in a kadai. Add the chopped jaggery and cook on low flame, stirring continuously, until the jaggery melts completely.

To the melted jaggery, add the fenugreek-wheat flour-almond-coconut mixture, crushed edible gum and the ground and sifted spice mix. Mix until well combined.

When the mixture is slightly warm, quickly form it into laddus. Grease your hands with ghee, Take a small portion of the mixture. Bind it and give it a round shape. Form small or medium sized laddus.

Healthy and Nutritious Winter Special Methi Coconut Laddu is ready. Enjoy one on a daily base. Cool completely and store it in an airtight container. It stays good for a month.
