Mixed Mì Quảng Noodles

Fresh noodle sheets are a familiar dish from Da Nang. This dish is commonly enjoyed in ways similar to the famous pork belly rice paper rolls or other types of rolls, or sliced thinly to make the renowned Mì Quảng noodles. The noodle sheets are a bit thicker than pho noodles, so they have a firmer texture. After receiving fresh noodle sheets as a gift from my sister, I immediately made Mì Quảng with them.

Blanch the noodle strips in boiling water until softened. Sauté chopped shallots (as a substitute for Vietnamese wild garlic).

Add the shrimp, eggs, and sliced pork sausage. Stir well, then add water, seasoning powder, fish sauce, and turmeric powder. Simmer until the flavors are absorbed. Place the peanuts in a small bowl.

Arrange the noodles, herbs, and toppings in a bowl. Add green onions, peanuts, ground black pepper, and a wedge of lime to serve.
