Wash and clean all the chicken thighs thoroughly well. Make slits for the juicy meat. The ingredients can be used according to one's own taste. You can increase or decrease them. Whole chicken thighs are preferred mostly for this recipe. But still if you want to take different pieces of chicken like thighs and legs separately along with the breast pieces, it's perfectly okay.

To a large cooking pot, add chicken, cloves, black peppercorns, cardamoms, cinnamon stick, salt and water. Allow it to cook for about 10-12 minutes on a high heat. After the stipulated time, set it aside to cool.

Now for the second part of the cooking part, it needs to be baked in an oven for the best results. Add the boiled chicken to a baking dish or a tray. Also add in minced garlic, olive oil and lots of sumac mixed in the stock remaining after the boiling. See to it that all the pieces are coated well. Add the stock also and reserve some for dipping the bread later.

Bake in a preheated oven on 180° for about 35-40 minutes or until it is aromatic and crisp on the outside. As it gets done in the oven, meanwhile add olive oil to a pan. Saute onions until nicely done or caramelized. They can be chopped or thinly sliced.

After the chicken is done, arrange the bread first on a large serving platter dipped in the chicken stock that was reserved. Arrange it all over the platter. Top it up with the roasted chicken. Further top it up with the caramelized onions, pine nuts or almonds and lots of chopped coriander or parsley. That's it.

Serve it piping hot immediately alongside a great Salad. Enjoy!
