As I buy large chunks of meat, like a beef brisket or loins, if they have chunks of deckle or suet. I freeze them for recipes like this.

Take the deckle which is the hard fat on a whole beef brisket, and cut into small pieces. Sauté with some of the salt.

When done, and fat is rendered, add in half the kale. When it has wilted enough add the broth, vinegar, and mirin.

Add the rest of the kale. When wilted salt to taste and add the garlic mix well, put the lid on the instapot, and cook pressurized for 25-30 minutes.
