Ingredients

  1. 1 packskinless / boneless chicken thighs, cut into cubes (about 3 pounds)
  2. Olive oil
  3. 1 can (15.5 ounce)black beans, undrained
  4. 1/8 teaspoonblack pepper
  5. 1 tablespoonground cumin
  6. 1/2 teaspoonchili powder
  7. 6 clovesgarlic, minced
  8. 1/3 cupcold water
  9. Chopped lettuce
  10. 1red onion, sliced
  11. Guacamole
  12. Sour cream
  13. 1log (8 ounce) goat cheese, crumbled
  14. 1 box (11.4 ounce)Hard /Soft taco shells kit
  15. Taco sauce from kit

Cooking Instructions

    Place your cleaned cut up chicken thighs into a large pot that has some olive oil in it…….

    Sauté chicken thighs until cooked through, then add your undrained black beans, black pepper, ground cumin, chili powder, minced garlic, water and seasoning from your taco kit, sauté for several minutes, then remove from heat ……..

    Spoon your chicken mixture into either a soft or hard taco shell, top with your chopped lettuce, red onion slices, guacamole, sour cream, taco sauce and crumbled goat cheese and enjoy 😉!!!!!!
