Ingredients

  1. 4green onions diced ;separate white and green
  2. 2 tbspMinced garlic
  3. 1jalapeño
  4. 1lime cut into quarters
  5. 1-2Roma tomatoes diced
  6. 3 tbspfajita seasoning
  7. 2chicken bullion cubes
  8. 1 cupjasmine rice
  9. 6-10chicken tenders
  10. 2 tbspmayonnaise
  11. 2 tbspsour cream
  12. Salt/pepper
  13. 2 tbspbutter
  14. 1 tspsugar

Cooking Instructions

    Melt 2 tbsp butter in a skillet and add green onion whites, 1 tsp minced garlic, 1/2 tbsp fajita seasoning and sauté for 1-2 minutes. Then add rice, chicken bullion and 2 cups of water. Bring to boil, then set to low/simmer, cover and let cook for 20-25 min.

    While that cooking, put chicken tenders in ziplock, add fajita seasoning and mix together. I used an air fryer at 375 degrees and cooked them for 15-17 minutes, flipped them halfway through.

    Mix sour cream, mayonnaise, and 1 tsp minced garlic. Stir together.

    To make it spicy; Cut the jalapeños and add 1 tsp sugar and salt, stir and let sit until food is ready.

    I leave this step out of my plate, because I don’t like it spicy.

    When done, add rice to plate, cut up chicken, add to top. Sprinkle white sauce mixture to top and sprinkle tomatoes and green onions to top. Serve!
