Chicken Soup for Stomach Illness

My daughter had an upset stomach and asked me to make her some chicken soup. This version is specially made for stomach issues—low in fat and with vegetables that are easy to digest and don’t cause gas. This is how my mom taught me to make it, and just like that book, it’s like chicken soup for the soul.

Steps
- 1
Prepare the ingredients. Wash all the vegetables thoroughly. In a large pot, add the chicken breast, water, onion, garlic, parsley, chopped celery stalks, and 1 teaspoon of salt.
- 2
To keep the broth clear, skim off any foam that forms as it boils. Let it boil for 20 minutes or until the chicken is cooked through. Remove the cooked chicken and strain the broth, then return it to the pot. Shred the chicken.
- 3
Add the carrots, potatoes, and chayote, all peeled and cut into similar-sized pieces. Bring to a boil again and cook for 30 minutes or until the vegetables are tender. In a deep bowl, place a spoonful of cooked rice and the desired amount of shredded chicken. Pour the hot broth over and add a piece of each vegetable. Serve with a squeeze of fresh lime juice or to taste. Ready to comfort your special someone!
