Heat oven to 200°C / Fan 180°C

Peel and cut potatoes (if they are big). Peeling and cutting is optional if using baby potatoes.

Drop/place potatoes in a pot. Cover with enough water. Add 1 tsp of salt. Put the lid on the pot and bring to a rolling boil. Remove the lid and keep boiling over low heat for another 5mins.

In the meantime, put few bay leaves and 3 tbsp of duck fat or ghee in a roasting pan. Heat in the oven until it's really hot.

Next, drain potatoes in a colander and shake off excess water. Sprinkle with some dried thyme.

Carefully transfer the potatoes into hot fat/oil as they will sizzle. Turn and roll them around. Spread in single layer. Roast for 15mins. Take the pan out, turn them over. Roast for another 15mins. Take them out again and turn them over.

Put them back in the oven. Continue to roast for another 20-30 mins or until they are golden and crisp.Remove from the oven, sprinkle with some salt and serve right away.
