In a wok add oil and heat up.add chopped garlic saute 30 seconds and add chopped onion. Saute 2-3 minutes or until the onion turn soft, then add tomato puree. Cook for 3-4 minutes on high flame.

Turn the flame low add coriander powder, Chilli powder, Chilli flakes,cumin powder,oregano and salt, mix and cook for 2 minutes add tomato ketchup mix and add chopped veggies.

Add 1/4cup water and cook on high flame about 3-4 minutes. When oil separated add boiled rajma corn kernels and jalapeños mix and cook for 2 minutes.

Add pre cooked rice,mix gently,add chopped coriander leaves and give it to a nice mix.cover and cook for 3-4 minutes. Turn off the flame.

The maxican rice is ready. Dish out and served with nachos and salsa.
