Ingredients

One hour for rice, 1/2 hour stir fry
2 people 4 dinners
  1. 2/3 poundlamb liver, cut in bite size pieces
  2. 2 TbsSesame oil
  3. 1Medium heat fresh green poblano pepper, slivered
  4. 1Red sweet pepper, slivered
  5. 1thumbnail fresh Ginger, slivered
  6. 1small carrot, cut in thin discs
  7. 4 clovesElephant Garlic, peeled, pressed
  8. 1/2red Onion, slivered
  9. 1napa cabbage leaf, shredded
  10. 1tomato, diced
  11. Marinade:
  12. 2 TbsSoy sauce
  13. 2 Tbsmirin cooking wine
  14. Optional Green chive garnish
  15. Serve over basmati rice to absorb the cooking juices
  16. For liver soup
  17. For shepherd’s goulash
  18. Equipment: wok, cast iron pan with lid to steam rice
  19. Cost: store bought lamb is around $4 a pound, liver is 2/3 pound, $3, vegetables $1 and rice/other $1, $1.25 per dinner

Cooking Instructions

One hour for rice, 1/2 hour stir fry

    Soak liver in milk 2 hours, rinse, dry, cut in bite size pieces.

    Stir fry onions and garlic on medium heat in sesame oil till onions are translucent. Add hard vegetables, ginger and carrot and stir fry till all dente. Then heat soft vegetables, peppers, tomato, cabbage. Taste hardest vegetable as a test.

    When done, turn up heat, add liver, stir fry 2 minutes in wok, add soy sauce/mirin wine mix, stirfry 2 more minutes.

    Serve cooking juices over cooked turmeric rice with stirfried lamb liver dinner. Optional garnish with chopped green chive.
