Flawless Sesame Chicken - American Restaurant Style

Ingredients

  1. Poultry
  2. 3whole boneless chicken breasts
  3. Marinade
  4. 2 tablespoonslight soy sauce
  5. 1 tablespooncooking wine or dry sherry
  6. 3 dropssesame oil
  7. 2 tablespoonsflour
  8. 2 tablespoonscornstarch
  9. 2 tablespoonswater
  10. 1/4 teaspoonbaking powder
  11. 1/4 teaspoonbaking soda
  12. 1 teaspoonvegetable oil
  13. Sauce
  14. 1/2 cupwater
  15. 1 cupchicken broth
  16. 1/8-1/4 cupwhite vinegar or rice wine vinegar (depending on how sweet you want the sauce)
  17. 1/4 cupcornstarch
  18. 1 cupsugar
  19. 2 tablespoonsdark soy sauce
  20. 2 tablespoonssesame oil
  21. 1 teaspoonchili paste (or more)
  22. 1garlic clove (minced)
  23. Frying
  24. 3 1/2 cupspeanut oil
  25. Serving
  26. 2 tablespoonstoasted sesame seeds

Cooking Instructions

    First, prepare the chicken & marinade:

    Cut the chicken into 1-inch cubes.

  3. 3

    Mix the marinade ingredients (the first 9 ingredients listed).

  4. 4

    Marinate the chicken for 20-39 minutes minutes.

    Second, prepare the sauce (perhaps while marinading):

    Mix together all of the sauce ingredients (the LAST 9 ingredients beginning with water).

    Pour them into a small pot and bring to a boil, stirring continuously.

    Turn the heat down to low and keep warm while you are deep-frying the chicken.

    Third, to deep-fry the chicken:

    Add the marinated chicken pieces a few at a time, and deep-fry until golden brown.

    Drain on paper towels and then place chicken in warm oven (130 degrees) while you continue frying.

    Repeat with the remainder of the chicken.

    Last, to put it all together:

    Just before you are finished deep-frying, bring the sauce back up to a boil.

    Place the chicken on a large platter and pour the sauce over.

    Sprinkle with sesame seeds.

    Serve the Sesame Chicken with rice.
