Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. and special occasions like marriage parties.In different parts of Gujarat, undhiyu is prepared in different way; Surti style, Kathiyawadi style and Matla Undhiyu are three popular variations of it. In Surti Undhiyu, vegetables like brinjal, potato, raw banana etc, are stuffed with the masala made of coconut, peanut, etc. In Kathiyawadi Undhiyu, vegetables are not stuffed but its masala is little spicier than other styles.

First of all wash, clean and chop all the vegetables, remove all the bean's seeds,. Make handfuls of fenugreek muthiya and fry. (see recipe)👇

Now fry the pieces of potato, brinjal, sweet potato, cauliflower mix. Blanch the seeds. Heat oil in a pan and add the ingredients of tempering.,Khada masala and saute it. Add onions, ginger, chili paste to it. Now add tomato and all the spices and let it cook for 2 minutes.

When oil separates, add fried vegetables and seeds, raw banana and mix. Add water, cover and let it simmer for 5 minutes. After that, add fried methi muthiya and take it off after 3-4 minutes.

Garnish with coriander leaves and grated coconut on top and serve. Delicious undhiyu is ready. It can be served with puri or paratha.
