Asparagus with Almond Butter Sauce

I was able to grab some freshly picked asparagus from the organic farmer's market, so I immediately came up with this recipe. You can also check out my blog: innerharmonynutrition.jp (English available.)

If you live in Japan, instead of almond butter, you can use peanut butter. If you want to make your own almond butter, add 2-3 cups of almonds to a food processor and process them patiently for about 13-20 minutes, until they become completely creamy like butter. Ingredients

4 servings
  1. 1/2 tspSalt
  2. 15Asparagus (thick) cut into 5 cm long pieces
  3. 1 smallbell pepper, thinly sliced
  4. 2 tbspAlmond butter or peanut butter
  5. 1 tbspTamari soy sauce or regular soy sauce
  6. 1 tspNatural sugar such as beet sugar, etc.
  7. 1 tspLemon juice
  8. 1 tspHot water
  9. 1 dashSalt
  10. 1 dashPepper

Steps

  1. 1

    Boil water in a pan, add 1/2 tsp of salt and cook asparagus for about 3 minutes. Don’t overcook.

  2. 2

    Immediately immerse asparagus in cold water.

  3. 3

    In a medium bowl, add the almond butter, tamari soy sauce, sugar, lemon juice, and hot water and mix well.

  4. 4

    Add asparagus and red pepper slices and coat them with the sauce. Season with salt and pepper.

  5. 5

    Refrigerate for at least a couple of hours.

  6. 6

    Infuse with love and gratitude, and serve!
