California Farm Hungarian Aspic with Buffalo Meat

From cookpad member Maria, Hungarian pork recipe called Kocsonya, I remember eating this on a visit to Budapest. Maria uses lean gamey venison loin and beef soup bones instead of pork to make this aspic in her recipe 1351. She inspired me to try gamey buffalo meat with unflavored gelatin made from beef bones. Thank you, Maria, your recipe is delicious, and the solid aspic was easy to remove from the glass, but mine came out too wiggly.
I need to make it stiffer next time and put fewer ingredients in. I reheated this aspic, added water and ate it as soup.

Ingredients

1 Hr cook, overnight simmer, overnight cool
2 people
  • 1 poundLean buffalo meat diced into 1/2” cubes after cooking strips, or lean beef
  • 4pouches unflavored gelatin
  • 3 quartswater
  • 1carrot, dice 1/4” thick after cooking strips
  • 1small turnip, dice 1/4” thick after cooking strips
  • 1leek, white part only, dice into 1/4” discs after cooking strips
  • 2celery stalks, dice in 1/4” discs (instead of Vegeta MSG)
  • 1/2elephant garlic bulb, minced
  • 1 tspcrushed green Peppercorns
  • 1 tspHerbs de provence (instead of Vegeta)
  • 1 Tbscorn starch dissolved in cold water
  • 1/2 tspCumin
  • 1/2 Tspflaked seasalt
  • For topping, Sprinkle of Hungarian sweet paprika powder
  • Equipment: dutch oven with lid, 2 german quart size beer mugs, shrinkwrap
  • Cost: buffalo meat $5, other $3, four pounds aspic for $8, $2 a pound

Steps

1 Hr cook, overnight simmer, overnight cool
  1. 1

    Wash, cut and trim all ingredients to size

    Bring 3 quarts water to boil, add meat, when boiling, skim off foam, turn down to simmer on low flame, lid off, simmer meat overnight till you have a quart of broth left. Remove meat, add pouches unflavored gelatin. Add corn starch one teaspoon at a time till broth is thickened to your liking.

    Line two 8” high quart size german beer mugs with shrink wrap.

    Dice the washed and slivered vegetables, add with spices to the broth, simmer till carrots are al dente. Remove from broth. Stir broth, add teaspoons of cornstarch dissolved in cold water till warm broth is thickened.

    Dice the meat after cooking, add back in broth. Stir the fluid hot aspic so ingredients are distributed evenly. Rinse glass mug with hot water, put shrinkwrap in, pour aspic into mug, cool.

    Cool till solid, pull aspic out of beer mug by the shrinkwrap. Remove shrinkwrap, serve aspic in slices sprinkled with hungarian paprika powder. Aspic freezes well. Wrap individual slices in parchment paper, then freeze in freezer bag. Compared to california pork aspic, this hungarian aspic is more flavorful.
